NEW DISH | PH TRÂU | WATER BUFFALO PH Ph with wok tossed garlic kissed water buffalo top round and pickled water buffalo shin from Öja Gård in Sörmland, water buffalo broth and our house made hand cut fresh rice noodles. Inspiration from this dish comes from my friend and multi award-winning chef Peter Cuong @petercuongfranklin at ANAN @anansaigon in Saigon where Peter has had waterbuffalo ph on the menu since day one. (Tastiest ph ever, btw). Chef Peter is spearheading ...modern Viet cuisine, which he calls Cuisine Mi, or New Vietnamese Cuisine, and he is a true inspiration. ANAN was recently listed on the prestigious 50 Best Asia @theworlds50best and chef Peter was listed on Asia’s Most Influential: The Tastemakers List 2021. Very well deserved if you ask me. Do not miss ANAN when in Saigon! We will serve this dish until we run out of water buffalo marrow bones for the broth. Might last a couple of weeks only so don’t miss out! #minhmatalacarte #öjagård

GI CUN MÙA THU We call them autumn rolls but we serve them all year round. Right now they are spiced up with oriental mustard leaves from our urban garden. Served with a creamy fermented soybean sauce. #minhmatalacarte #vegan

HEO NUONG MAC KHEN GRILLED MANGALICA PORK SKEWERS WITH MAC KHEN PEPPER One of my favorites on our menu right now is this variant of a dish that is common among the minority peoples Thái and H'Mông in the mountainous areas of northwestern Vietnam. Grilled skewers with Mangalica pork from Rosa Skattlådan @rosaskattladan , spring onion oil, sticky rice grilled rolled inside banana leaves, sarepta mustard leaves from our own urban garden and pickled carrots and daikon.... To top it all off, a spice mixture of ground mc khén pepper, salt and sesame seeds to dip the pork and rice in. Mc khén pepper (Zanthoxylum rhetsa) is related to Sechuan pepper and Batak pepper. It is not really pepper but a seed capsule on a deciduous tree that is related to orange. Mc khén grows wild in the rainforests of western Vietnam. Mangalica is a Hungarian pig breed that stems back to the mid-19th century by crossbreeding various Hungarian with wild boar and the Serbian Šumadija breed. With its thick curly fur it almost looks more like a cross between pig and sheep. Mangalica means hog with a lot of lard in Hungarian and that is a fitting name. Mangalica is often called the Kobe beef of pork, and for good reason. The meat is marbled beautifully. We get Mangalica from Rosa Skattlådan @rosaskattladan and from Blekslätten @blekslatten_gard2 , both fantastic producers that I admire so much. Their produce can be found at all the best restaurants in Sweden so I feel lucky to get it to Minh Mat. #minhmatalacarte #hatmackhen

Fresh hand cut rice noodles for our Ph Trâu (water buffalo ph). It’s a lot of work to make the fresh noodles. First the rice flour batter needs to soak for about 20 hours. Then we steam it to make noodle sheets, which is then cut by hand into noodles. A lot of work but it is so much better than buying dried ph noodles. Our Ph Trâu is served with wok tossed garlic kissed water buffalo top round and water buffalo shin which is thinlt cut and pickled with garlic before it goes into the broth. The broth is made with water buffalo marrow bones. The water buffalo comes from from Öja Gård in Sörmland. #minhmatalacarte #öjagård
